Kale & Walnut Salad

Get your greens in with this super easy but super tasty salad. Enough on its own but also very complimentary as a side to your protein and carbohydrates.

Ingredients:
6 cups roughly chopped & de-stemmed curly kale
¼ cup extra virgin olive oil
¼ cup finely grated parmesan cheese
½ cup finely chopped roasted/toasted walnuts
½ grapefruit (optional)
Pinch sea salt

Kale and Walnut Salad

Method:

Prepare the kale in a large salad bowl.
Dressing – In a jug, mix the olive oil, lemon juice and salt.
Pour the dressing over the kale and gently stir so the leaves are coated in flavour.
Sprinkle the kale with diced grapefruit, crushed walnuts and parmesan cheese.
